1½ lbs peeled, washed, and quartered
1 small shallot or red onion, peeled and sliced
3 scallions finely sliced
½ cup vomfass extra virgin olive oil
2 tablespoons vomFASS Apple Vinegar, add more according to taste
¼ cups fresh parsley chopped
¼ cup fresh dill chopped
Pinch of dried oregano (optional)
VomFASS Salt and black pepper
Chopped apple for extra crunch and freshness (optional)
