Cassis also known as blackcurrant adds a sweetness to the pure balsamic vinegar. The taste is beyond belief and is excellent when used on strawberries.

When mixed with pumpkin seed oil or lemon oil, this vinegar is excellent when and added to cooking  shallots. It is also wonderful when mixed with any kind of shell fish.
